Cherry curd yogurt pots

A beautiful blend of creamy yogurt with crunchy granola & deliciously sweet cherry curd served with your favourite fresh or frozen berries. Ideal as a dessert or for breakfast. Ready in under half an hour.

Equipment

  • 1 baking sheet or tray
  • 1 Mixing bowl
  • 1 spoon
  • 4 tumbler glasses or bowls
  • 1 Small saucepan
  • greaseproof paper

Materials

  • 130 g homemade muesli see my recipe
  • 80 g unsalted butter
  • 50 g soft brown sugar
  • 1 tbsp honey or syrup
  • 500 g pot of Greek natural yogurt
  • 4 tsp Thursday cottage cherry curd
  • Selection of fresh or frozen berries

Instructions

  • Pre-heat the oven to 170 degrees fan, 190 non-fan
  • Line the baking tray with greaseproof paper.
  • Place the syrup, sugar and butter in the small saucepan and gently melt.
  • Combine all the muesli ingredients and add the hot liquid. Stir to completely coat.
  • Lay the mix out on the baking sheet and bake for around 20minutes until golden brown.
  • Remove from the oven to cool completely.
  • Now gently stir the cherry curd through the yogurt.
  • Once the granola is cool layer the yogurt, granola and berries into the glasses or bowls.
