Mediterranean Flan
Simply grab a packet of ready roll puff pastry, roast some vegetables and in no time you'll have a delicious dinner.

Equipment
- 1 baking sheet
- 1 Sharp knife
- Oven
- 1 oven proof baking dish
Materials
- 1 red pepper, slice into strips
- 1 yellow pepper, sliced into strips
- 1 red onion, thinly sliced
- 1 courgette, sliced lengthways and cut into half moons
- 2 tbsp rapeseed oil
- feta cheese (or mozzarella)
- 4 tbsp tomato puree
Instructions
- Pre-heat the oven to 180 degrees fan/200 non-fan
- Place the sliced vegetables into the oven proof dish and drizzle with the oil
- Roast in the oven for 20-25 mins.
- Meanwhile, lay the ready roll puff pastry onto a baking sheet.
- Flute the edges of the pastry.
- Spread the tomato puree over the pastry
- Top with the roasted vegetables and place pieces of the the feta or mozzarella over the vegetables.
- Return to the oven and bake for a further 20 minutes.
- Serve with a mixed salad.
