Mediterranean Flan

Simply grab a packet of ready roll puff pastry, roast some vegetables and in no time you'll have a delicious dinner.

Equipment

  • 1 baking sheet
  • 1 Sharp knife
  • Oven
  • 1 oven proof baking dish

Materials

  • 1 red pepper, slice into strips
  • 1 yellow pepper, sliced into strips
  • 1 red onion, thinly sliced
  • 1 courgette, sliced lengthways and cut into half moons
  • 2 tbsp rapeseed oil
  • feta cheese (or mozzarella)
  • 4 tbsp tomato puree

Instructions

  • Pre-heat the oven to 180 degrees fan/200 non-fan
  • Place the sliced vegetables into the oven proof dish and drizzle with the oil
  • Roast in the oven for 20-25 mins.
  • Meanwhile, lay the ready roll puff pastry onto a baking sheet.
  • Flute the edges of the pastry.
  • Spread the tomato puree over the pastry
  • Top with the roasted vegetables and place pieces of the the feta or mozzarella over the vegetables.
  • Return to the oven and bake for a further 20 minutes.
  • Serve with a mixed salad.
