Mediterranean Flan
Simply grab a packet of ready roll puff pastry, roast some vegetables and in no time you'll have a delicious dinner.

1 baking sheet
1 Sharp knife
Oven
1 oven proof baking dish
- 1 red pepper, slice into strips
- 1 yellow pepper, sliced into strips
- 1 red onion, thinly sliced
- 1 courgette, sliced lengthways and cut into half moons
- 2 tbsp rapeseed oil
- feta cheese (or mozzarella)
- 4 tbsp tomato puree
Pre-heat the oven to 180 degrees fan/200 non-fan
Place the sliced vegetables into the oven proof dish and drizzle with the oil
Roast in the oven for 20-25 mins.
Meanwhile, lay the ready roll puff pastry onto a baking sheet.
Flute the edges of the pastry.
Spread the tomato puree over the pastry
Top with the roasted vegetables and place pieces of the the feta or mozzarella over the vegetables.
Return to the oven and bake for a further 20 minutes.
Serve with a mixed salad.
