Broccoli & Tomato Pasta
A delicious pasta dish made with simple ingredients.

Materials
- 1 tbsp rapeseed oil
- 1 garlic clove, finely chopped
- 1 head of fresh broccoli, chopped into florets
- 1 tin of chopped tomatoes
- 25 g pine nuts Pine nuts are expensive but you only need a small amount.
- 25 g sultanas Optional
- 100 g dried pasta Try to use whole wheat pasta & adjust the quantity to suit your appetite.
- Grating of cheese to serve & black pepper
Instructions
- Bring a pan of water to the boil & cook the broccoli until tender.
- Meanwhile, heat the oil in the frying pan and add the garlic, cook for 1 minute. Be careful, it can burn very easily.
- Then, add the tin of chopped tomatoes and bring to a very gentle simmer to allow the tomatoes to reduce (this stops them being very watery)
- Once the broccoli is cooked, remove with a slotted spoon and place straight into the tomato mix.
- Then re-use the broccoli water to cook your pasta.
- When the pasta is cooked, drain and carefully stir into your tomato mixture. If your tomato is slightly dry, add a drop of water.
- Serve immediately with a grating of cheese (cheddar, parmesan etc)
