Materials

  • 1 red onion, finely chopped
  • 400 g Aduki beans Borlotti, cannellini & haricot beans work too.
  • 1 tbsp tomato puree
  • 1 tbsp pine nuts
  • 1.5 tbsp fresh breadcrumbs Dried or panko breadcrumbs work too. They are simply to bind the burgers.
  • Freshly ground black pepper

Instructions

Heat a tablespoon of rapeseed oil in a large frying pan.

Add the chopped red onion and gently soften for 10 mins.

Turn off the heat and place the onion in a large bowl to cool slightly.

Next, add the beans, tomato puree, breadcrumbs and pine nuts to the onion.

Using your hands, combine the ingredients, squeezing the beans to held the mixture combine.

Take a ball of beans and shape into a burger, repeat, and put on a plate and chill in the fridge for at least 10 minutes. They'll happily sit there for longer, if you need them to.

Using the frying pan you used for the onion, heat another tablespoon of oil, then fry the burgers gently for 5 minutes on each side.

Serve on the bun of your choice, with spicy sauce, tomato sauce, anything that tickles your fancy, and sweet potato chips are great too.
