A healthy meal on a budget – broccoli and tomato pasta

Healthy food that doesn’t cost the earth.

You will be utterly amazed how one head of broccoli costing around 80pence has the ability to feed your whole family. With the injection of some tinned tomatoes, raisins and pine nuts, you will be feasting before you know it. This recipe was one of the first meals I made when I was learning how food has the power to heal. I still eat it today over 17 years later, and I always love it. It’s nourishing, quick and so economical. If you want to be extra indulgent, pop some garlic bread on the side to scoop up the tasty garlic and tomato sauce.

Pasta facts

The UK has been producing pasta since 1936 with its introduction dating back to the 19th & 20th century following the arrival of Italian immigrants. Pasta houses followed once rationing ended in 1954. It it in some ways, a staple ingredient in all of our diets much like the delicious potato and with the endless amount of recipes that can be created it’s no wonder it is. According to an article in The Guardian, ‘We consume £272m worth of pasta a year. With statistics like this, it’s quite obvious, we all love pasta. Everyone I know has a recipe that they love and one friend of mine still makes a pasta dish that she used to make when a teenager. Pasta has a heart and whatever your sauce of choice, we can’t get enough of it.

Twenty years ago, if you’d told me that I would be combining a vegetable that I associated with my roast dinner with an ingredient that I usually ate covered in a thick creamy sauce, I would have said you were crazy, and yet, that is exactly what I do. Vegetables have become my go to with every single meal I eat, even if I do pair with a small portion of meat, they are the stars of the show, and I want the vegetables more than anything else on my plate. If you are in a position where you are trying to make a change to the way you eat and how you nourish your body, this recipe is certainly a great way to start. Vegetable based meals don’t need to be expensive and they can be the main meal, and not just the side show. They’re versatile and and are quite happy to sit alongside other vegetables. I often have many vegetables all on the same plate and with the addition of garlic, chilli or something equally tasty, they always taste great.

Cooking brings me such an enormous amount of pleasure every single day – without it I always feel like something is missing in my life, and now food photography is having the same effect!
