My famous Friday flatbreads! Delicious any day of the week and they are so quick to make, plus a great way to use up Fridge leftovers.

Pre-heat the oven to 220 degrees fan or 200 degrees non-fan and if you have one, heat a pizza stone.

Prepare all the ingredients and place in front of you ready to build the flatbread.

Lay the flatbreads on the baking sheet or pizza stone.

Using a knife or spatula, put a layer of tomato puree or pesto on the base, then simply add your toppings, finishing off with the cheese.

Place in the oven for approximately 10 minutes. Keep an eye on them as they can burn quite easily!

Serve fresh from the oven with a green salad.
