Transform a humble pack of ready roll puff pastry into a delicious meal in under an hour. Perfect for lunch with salad, superb for a starter when friends are over and just as tasty in a packed lunch when you are on the go. I simply love this recipe. The sweetness of the red onions and the saltiness of the feta cheese makes it utterly delicious. As with all my recipes, it’s easy to make. The sole purpose behind all my recipes is to make it possible for everyone to eat fresh, homemade food as often as it possible in their own kitchens. Hope you like it.

Red onion & feta flan

Servings: 6

Ingredients

Instructions

  1. Pre-heat the oven to 180 degrees Celsius (fan) / 200 degrees Celsius (non-fan)
  2. Remove the puff pastry from the fridge to bring to room temperature.
  3. Heat the oil (or butter) in a frying pan, add the sliced red onions and fry for around 10 minutes until they are soft. Add the balsamic vinegar and sugar if you are using and continue to fry for a further 5 minutes. Turn off the heat and allow to cool while you prepare the pastry.
  4. Roll out the puff pastry onto a baking sheet lined with greaseproof paper. Score a line 1cm away from the edge to create a border (do not cut all the way through)
  5. Spread the onion mixture all over the pastry base and crumble over the feta and black olives. Drizzle with rapeseed oil and bake in the centre of the oven for 20 minutes until the edges are brown and the base is crisp.
  6. Serve either hot or cold with a salad of your choice.
