Noodles are as versatile as pasta when it comes to creating a speedy dish that is both nutritious and delicious! In this recipe, I use the fine egg noodles but it really is personal preference as to which type you use. In fact, if you don’t have noodles, just use pasta instead. The ingredients I list in the recipe are completely flexible so feel free to release your creative side and add a bit of what you fancy. Jar of olives, artichokes, chargrilled peppers, capers all go perfectly with the silky noodles and spicy chilli sauce. Finally, my version includes a tin of chilli makerel which is delicious and if you haven’t tried it before has a sweet flavour. Hope you enjoy it as much as I do.
Spicy Noodles
Ingredients
Instructions
-
Heat the rapeseed oil in a large frying pan. Add the chilli and fry gently for about 30 seconds until it releases it flavour.
-
Next, add the artichokes, peppers and makerel if you are using it. Gently fry for around 5 minutes. Everything is cooked so you are really just heating it through.
-
Now, add the capers, olives and if you want it extra, extra hot, the sriacha.
-
While everything is simmering, cook the noodles as per the packet. They normally take around 2 minutes.
-
The way you serve is your choice; you can combine the noodles with the sauce or serve the sauce on top of the noodles. Either way, serve them nice and hot.
