Noodles are as versatile as pasta when it comes to creating a speedy dish that is both nutritious and delicious! In this recipe, I use the fine egg noodles but it really is personal preference as to which type you use. In fact, if you don’t have noodles, just use pasta instead. The ingredients I list in the recipe are completely flexible so feel free to release your creative side and add a bit of what you fancy. Jar of olives, artichokes, chargrilled peppers, capers all go perfectly with the silky noodles and spicy chilli sauce. Finally, my version includes a tin of chilli makerel which is delicious and if you haven’t tried it before has a sweet flavour. Hope you enjoy it as much as I do.

Spicy Noodles

  1. Heat the rapeseed oil in a large frying pan. Add the chilli and fry gently for about 30 seconds until it releases it flavour.
  2. Next, add the artichokes, peppers and makerel if you are using it. Gently fry for around 5 minutes. Everything is cooked so you are really just heating it through.
  3. Now, add the capers, olives and if you want it extra, extra hot, the sriacha.
  4. While everything is simmering, cook the noodles as per the packet. They normally take around 2 minutes.
  5. The way you serve is your choice; you can combine the noodles with the sauce or serve the sauce on top of the noodles. Either way, serve them nice and hot.
