A tomato sauce recipe for you that never ever disappoints, and once you’ve made it a few times will become a main stay in your recipe book; tomato sauce has only a handful of ingredients and yet it tastes delicious. The secret is the butter (naturally, butter variety of your choice :-)) and this forms the base of the sauce but more importantly it gives you a silky sauce to coat your pasta it, top on your chicken breast, use when making your favourite cannelloni recipe or cook it down to make the tomato sauce on your pizza. Never again will you buy a jar of tomato sauce that’s filled with who knows what. Cooking from scratch gives you control over the foods you put in your body and if you need somewhere to start there is no better place than this fresh tomato sauce.

Instructions

  1. In a large saucepan, heat the oil and butter until sizzling.
  2. Add all onion, celery and carrot and stir well to coat the vegetables in the melted butter and oil.
  3. Cover with a lid, lower the heat and allow the vegetables to gently soften. Do not let them go brown or burn as this will make the sauce bitter.
  4. Now add the 2 tins of chopped tomatoes. Stir thoroughly and with the lid back on, allow the sauce to simmer gently for 25 minutes.
  5. Allow the sauce to cool slightly then either blend with a stick blender, a food processor or soup blender. This will create your rich and silky sauce that you can serve with pasta or as a topping on chicken or fish.
