Quick Tuscan Salad

In a small bowl mix the oil, red wine vinegar and crushed garlic, along with some salt & pepper.

Toast the ciabatta and cut into cubes then add to the dressing for at least 20 minutes.

If you have time, either roast or grill the peppers on a high heat then cut into bite size pieces. Ideally, prepare your peppers the day before. Otherwise you can use a jar of chargrilled peppers.

Now simply combine all the ingredients and serve with salad leaves.

Delicious with grilled halloumi, cheese, cured meats or meat from the BBQ.
